SHRIMP SCAMPI
- Cook angel hair pasta or capellini pasta (something thin)
2 T of olive oil
2 T of butter
1 lb. of peeled and deveined shrimp
1 T garlic, minced
S&P to taste
- Remove the shrimp from the pan after cooking
½ cup white wine (preferably something dry)
2 lemons (juiced)
1 t. of Dijon mustard
2 T of fresh parsley, chopped
4 T of butter
S&P to taste
- Add cooked pasta and shrimp back to the pan
Olive oil drizzle once plated
